INGREDIENT
FOR THE CARAMELIZED ONIONS
1/2 tablespoon olive oil
1/2 tablespoon butter
1/4 teaspoon dried thyme
1/2 cup thinly sliced white onions
salt and pepper, to taste
1/2 large baguette (French bread)
1 tablespoon olive oil, plus more for drizzling
1/4 cup grated mozzarella cheese
2 to 3 bottled tuyo fillets in olive oil
4 to 6 black olives, sliced
1 teaspoon chopped garlic

HOW TO COOK
1. Make the caramelized onions: Heat oil and butter in a pan. Add thyme and onions; sauté until onions wilt completely and turn light brown in color. Season to taste. Set aside until ready to use.
2. Slice the baguette in half lengthwise. Drizzle with olive oil. Top each half with mozzarella and caramelized onions. Arrange tuyo fillets and black olives on top. Sprinkle with chopped garlic and drizzle with olive oil. Toast for 3 to 5 minutes or until the cheese has melted. Garnish with chopped parsley, if desired.
