Fiesta Prawn Cups

These bite-sized prawn cups are deliciously fun and perfect for entertaining guests this holiday season.

Makes 16 Prep Time 15 minutes

350 grams small prawns, peeled, deveined, cooked, then halved lengthwise
1 small Asian pear, peeled, cored, and finely chopped
1 small avocado, seeded, peeled, and finely chopped
1 shallot, finely chopped
juice of 1 lime
1 tablespoon olive oil
1 long red chili, seeded and finely chopped

2 heads lettuce, trimmed and leaves separated
micro cilantro for garnish (optional)

How to Cook Fiesta Prawn Cups
1. In a bowl, combine prawns, pears, chopped avocado, shallots, lime juice, oil and chilies. Season to taste.

2. Arrange lettuce leaves on a platter. Top with prawn mixture. Garnish with micro coriander and serve immediately.
