CURRIED EGG ON TOAST


Black teas have a very robust aroma and taste, making it the perfect partner for dishes that are bold in flavor. Smoky Darjeeling tea pairs well with this recipe.

Serves 4 Prep Time 10 minutes

     

INGREDIENT
6 tablespoons mayonnaise
2 tablespoons sour cream
3 teaspoons curry powder
5 large hard-boiled eggs, chopped
1 small red onion, finely chopped
salt and pepper, to taste
6 slices white bread, toasted and halved with crusts trimmed off
chopped green onions for garnish

HOW TO COOK CURRIED EGG ON TOAST
1. Combine mayonnaise, sour cream, and curry powder in a bowl. Mix until well combined.
2. Toss in eggs and onions; gently mix to combine. Season to taste.
3. Spread a tablespoon of egg mixture on top of each piece of toast. Garnish with green onions. Repeat with remaining ingredients.
