8 large eggs
1/2 cup milk
1/2 cup heavy cream
1/4 cup tomato sauce
1/2 teaspoon salt
8 rounds freshly cracked black pepper
2 tablespoons butter
1 tablespoon olive oil
1/2 cup chopped onions
400 grams Italian sausage, sliced
1/4 cup sun-dried tomatoes packed in oil, cubed
1 tablespoon chopped green onions
1 tablespoon fresh basil leaves, chopped
1/4 cup crumbled feta cheese
2 tablespoons grated Parmesan cheese
HOW TO COOK SAUSAGE AND SUN-DRIED TOMATO FRITTATA
1. Whisk together eggs, milk, cream, tomato sauce, salt, and pepper in a glass bowl. Set aside.
2. Add butter and oil to a 9-inch nonstick pan. When the butter has melted, add onions and sauté until softened. Add sausages; cook until golden and fragrant. Add sun-dried tomatoes.
3. Pour frittata mixture into another pan and set heat to low. Cover and cook until frittata is almost set. When almost done, sprinkle chopped green onions, basil, feta cheese, and Parmesan cheese on top. Serve hot with bread or rice on the side.
