2 kg damsons
Put the damsons and water into a large pan and simmer gently until completely broken up.
Push through a colander and weigh the pulp – for every 400g of pulp add 350g caster sugar and return to the pan.
Cook until very thick and a line is made when a spoon is drawn through the pan.
Pour into a tray lined with baking parchment to set.
