This crowd-pleasing dish is easy enough to make for a regular weeknight, but so delicious that it will definitely impress at your next potluck.

250 grams penne pasta
250 grams bacon, thinly sliced
leaves from 2 heads romaine lettuce, washed and torn
250 grams cherry tomatoes, halved
1/4 cup grated Parmesan cheese
FOR THE DRESSING
1 egg
1/4 cup mayonnaise
2 teaspoons mustard
2 teaspoons lemon juice
1 tablespoon finely chopped chives
salt and black pepper, to taste
1. Cook pasta in a large saucepan of boiling salted water according to package directions.
Drain well and let cool.
2. Meanwhile, heat a medium non-stick pan over high heat. Sauté bacon until crisp,
around 2 to 3 minutes. Set aside.
3. Make the dressing: Whisk all ingredients together in a bowl. Season with salt and
black pepper.
4. In a large salad bowl, combine pasta, bacon, lettuce, and tomatoes. Drizzle dressing over and sprinkle with Parmesan before serving.
