Green Beans with Pomegranate

Serves 8 as a side
500g green beans, trimmed
2 tbs extra virgin olive oil
1 tbs pomegranate molasses
1 tbs lemon juice
2 tsp maple syrup
2 tsp caster sugar
1/3 cup (80ml) pomegranate seeds

Cook beans in a saucepan of boiling, salted water for 3 minutes.

Drain and refresh in a bowl of iced water.

Whisk oil, molasses, lemon juice, maple syrup and sugar together in a bowl.

Place beans in a serving bowl, drizzle with dressing, then sprinkle over pomegranate seeds and serve.
